Description

Is the most famous red italian wine. Is a toscanity flag. It is made with only Sangiovese grapes cultivated in Montalcino, where this grape find its  ideal microclimate. Is a long aging wine.

Slope and Position:  hilly from southeast to southwest

Altitude:  from 380 to 470m above sea level

Climate: typically Mediterranean with precipitation concentrated in spring and autumn months.  The location of our vineyards, the ventilation and the lack of fog guarantee the best conditions for vine vegetation and for the health of the grapes

Soil Composition: tuffaceous, particularly rocky soil made up of marl and alberese (clay, lime and rock) shales

Variety:  100% Sangiovese select

Density: 5,000 plants per hectare in the oldest vineyards (12 years old) and 5,500 in the recent vineyards (2006)

Training System and Pruning: Horizontal cordon training with short pruning, 4 to 5 spurs with maximum of 2 buds per plant which allows for a low yield per hectare of 50 to 60 quintals of grapes (the regulations state a maximum of 70)

Cultivation Techniques:  are entirely done by hand with particular care and attention to the winter pruning, the selection of shoots and the thinning out of the grapes

Harvest:  first ten days of October

Vinification:  the grapes from each vineyard are vinified separately in steel vats.  The fermentation is temperature controlled between 24° and 26° with a long maceration of the grapes, which, with frequent pumping over of the cap and délestage, allow for the extraction of polyphenols from the skins which has an important function in the longevity and quality of the wine

Drawing off:  soft pressing to separate the skins from the wine

Ageing: three years (36 months) in 25 to 30hl oak barrels and at least one year in the bottle

Organoleptic Characteristics: deep ruby red with garnet tinge, persistent and full fragrance in which pleasurable overtones of small red fruits, cherry are followed by rhum cake and blueberry preserves. When the glass is empty you can feel a very good sensation of fruits, flowers and light wood. On the palate it has an elegant harmonious, very balanced tannins and lingering length.  Alcohol content 14.50%.  Recommended serving temperature between 18° and 20°.  Decant in carafe so wine can breathe better in order to obtain its total elegance and purity. Conserve the bottle in horizontal position.

Azienda Poggio Rubino si trova nella zona che sovrasta le colline di Montalcino a circa 3 km dal centro del paese ad un altitudine di 470 mslm e si sviluppa su 15,5 ha totali e qui produce i suoi pregiati vini, Brunello di Montalcino e Rosso di Montalcino. I vigneti coprono una superficie di 7 ha di cui 6,7 ha coltivati a sangiovese selezionato ed i restanti 0,3 ha saranno impiantati nella primavera 2010, l’età media è di 10 anni, ad eccezione dei più recenti messi a dimora nel 2006 in loc. San Prospero . I vigneti si trovano in aree diverse del territorio di Montalcino, le particolari esposizioni e le caratteristiche dei terreni, consentono l’ottenimento di vini con evidente personalità esaltando perciò le peculiarità del singolo vigneto. Cure colturali appropriate eseguite rigorosamente a mano, come l’accurata scelta dei capi in potatura, al momento della selezione dei germogli e quando inizia l’invaiatura il diradamento dei grappoli fanno in modo che ogni singola vite mantenga un equilibrio vegetativo e un’ottimale distribuzione della produzione, assicurando quindi una maturazione completa di ogni singolo grappolo. Lo scopo è produrre 1-1,5 kg a pianta in modo da spingere ogni singola vite a convogliare le sue energie in quei pochi grappoli, dando ad essi una maggiore concentrazione zuccherina e polifenolica permettendo altresì di avere la piena qualità dell’uva dal punto di vista enologico (polifenoli, tannini e antociani) anche in annate più difficoltose. Questo tipo di gestione consente sia una forte limitazione nell’uso e nella tipologia dei fitofarmaci (si utilizza infatti solo rame e zolfo) , sia la rinuncia alla pratica del diserbo chimico a favore della lavorazione dei terreni. Le rese massime per ettaro sono pari a 50-60 quintali. Poggio rubino azienda

 

The Poggio Rubino estate is located in the area above the hills of Montalcino at an altitude of 470m above sea level, about three kilometres from the town centre and here produces its rare wines. The estate extends over 15ha and the vineyards cover a surface area of 7ha, entirely cultivated with select Sangiovese while the remaining 0.3ha will be planted in Spring 2010.  On average, the vines are ten years old with the exception of the most recent ones planted in 2006 at San Prospero.  The vineyards are positioned in different areas within the territory of Montalcino.  Each individual location and the characteristics of its terrain allow for the attainment of wines with evident personalities accentuating the uniqueness of each individual vineyard.

The most suitable care in cultivation is carried out strictly by hand including the careful selection of canes during pruning and at the moment of the shoot selection along with the thinning of the clusters when the veraison starts.  This enables each single vine to maintain a vegetative balance and an excellent distribution of production, thus ensuring the complete maturation of the bunch. The goal is to produce from 1 to 1.5 kg per plant in order to force each individual vine into channelling all its energy into those few clusters and, likewise, imparting to each of them the highest possible sugar and polyphenol concentration.  In turn, this permits the grapes to reach their full potential from an oenological point of view (polyphenols, tannins and anthocyans) even in most difficult growing years.

This type of management allows for both a great limitation in the use and the type of pesticides (in fact, only copper and sulphur are used) and a refusal to use chemical weed control in favour of working the land.  The maximum yield per hectare is 50 to 60 quintals.

Extra Virgin Olive Oil | Organic

Extra Vergine di Oliva The Extra Virgin Oil is a fresh olive juice that has several virtues. As a precious elixir, it is preserved with extreme consideration and a particular care is given in each phase of production
  • Olive Varieties: Frantoio 60%, Moraiolo 30%, Leccino 5% e Pendolino 5%.
  • Area of production: The olive groves are situated at 400 mt. above sea level on a mixed soil that extends for 44 hectars and holds 8,000 plants.
  • Age of olive trees: Recent trees were planted in the 1980s while the older trees were planted in the 1950s.
  • Plantation density: Around 300 plants per hectar.
  • Training system: polyconic vase.
  • Time of harvest: From late October to late November.
  • Method of harvest: Olives are harvested by hand to ensure that only perfectly healthy olives, of optimal ripeness are selected.
  • Processing: The olives are first washed in order to remove leaves and impurities, then they are cold-pressed at a controlled temperature of 22 ° for approx 30 minutes. The separation of the oil and the vegetation water is realized through centrifugal.
  • Percentage of oil produced from the olives: It varies widely every year, but usually under 15%.
  • Sensory Characteristics: It is a brilliant green color with golden undertones. Its perfume is an intense and persistent wet grass with hints of artichoke and eggplant. It is full bodied with slight tastes of fruit, spice and herbs.
  • Serving suggestions: The ideal use of this particular oil is with authentic cold dishes of raw vegetables soups, salads and dips. However, it is also perfect in cooked sauces and roasts.

The company covers more than 110 hectares of which 44 hectares are cultivated with olive groves. It is fertilized exclusively with organic products or legume green manure, taking full account of nature.The limited production of biological cultures also ensures a better quality, year after year. The olive harvest, like the one of the grapes, is traditionally done by hand for an exclusive selection of raw materials. The extra virgin olive oil derives exclusively from organic olives of the farm, which are still "hand-picked" and then cold-pressed in their own mill.

Description Vineyards: Planted in 1963 and 1978 and trained in Guyot. Harvest: Begining of September precise selection of the best grapes. Vinification and maturation: The grapes are left to wither in a ventilated room for about four months. After this period they are softly pressed and the collected must is immediately put in small oak barrels of 50 litre capacity. These barrels, traditionally called caratelli, are placed in the attic of the winery where the wine slowly ferments and matures for 5 years, exposed to temperature changes during the seasons. Refinement: A few months in bottles before release. Ageing capacity: Unlimited. This wine aquires extra complexity with age. Sensory characteristics: Very pronounced amber colour. Intense, fine and pleasant on the nose with notes of raisins and candid fruit followed by honey, vanilla and dry figs with hints of walnut and coffee. At the palate it reveals a full and intense body, with a very good balance between the softness and heat of its alcohol and its freshness. The finish is long and extremely pleasant. Serving suggestion: Matured cheese, dried patisserie and dark chocolate.
