Description

“The ploughed leguminous between the rows feed our vines, the breeze and the sun protect them from disease, a patient waiting assures the perfect healthiness and ripeness of the grapes. The natural balance and ancient traditions are the source of Cedro, a Chianti Rufina that has great personality and that expresses the characteristics of this appellation, also defined as “the highest of the Chiantis”.

  • Vineyards are situated 400 mt. above sea level in a rocky soil particularly rich in limestone which gives Chianti its characteristic
  • Age of vineyards: the vineyards where planted in the 90’s. Training system: Guyot & Spurred cord.
  • Production: Approx. 1,5 kg of grapes per vine.
  • Harvest: Manual in small cases around mid October.
  • Vinification: Soft destemming of the grapes. Fermentation and maceration at controlled temperature in stainless steel for about 10 days with numerous pumpovers and delestages.
  • Maturation: In French oak barrels of 35 and 70 hl for 24 months. Refinement: 6 months in bottles before release.
  • Ageing capacity: 10-12 years.
  • Sensory characteristics: the wine shows a good density and a pretty garnet-ruby color. Earthy notes of forest floor and bramble open the bouquet. Moderately toasted notes of spice and leather appear, giving a great sense of fullness. Crispy acidity on the close really speaks of the Rufina area.
  • Serving suggestions: In its early years this wine is complimented with all food and when aged it is delicious with sauced meats, poultry and roasts.

HISTORY: "The Farm...as once" Farm history came from 1700 when was built by Peruzzi' family. In 1800 passed to marquis Strozzi Sacrati of Mantova and finally,in 1978, to the current owners the brothers Lottero, who came from Genoa and has always been Tuscany lovers, who undertook a complete restoration allowing the recovery in production. Since then the farm has preserved the best traditions of farm dedicated to the cultivation and production of organic wine and oil, combining old hand craft methods, the most modern techniques. In the park of the manor house is a centuries-old cedar of Lebanon of more than 250 years, he became the symbol of the farm. The company's production of wine, olive oil, wheat and green garden product is done with only the use of organic matter for the governament of plants; we ask to the nature cooperation and, to contrast the aggression of harmful parasites, we favor athe conservation of a habitat where animals can thrive antagonists pests themselves; early to check the presence of diseases, have been placed in adherence to the vineyards, hundreds of rose bushes, particularly sensitive to certain diseases. Organic farming is carried out with the use of modern means of processing and according to current knowledge, in full respect of the balance, which is the only proper use of the land by man. Description Vineyards: Planted in 1963 and 1978 and trained in Guyot. Harvest: Begining of September precise selection of the best grapes. Vinification and maturation: The grapes are left to wither in a ventilated room for about four months. After this period they are softly pressed and the collected must is immediately put in small oak barrels of 50 litre capacity. These barrels, traditionally called caratelli, are placed in the attic of the winery where the wine slowly ferments and matures for 5 years, exposed to temperature changes during the seasons. Refinement: A few months in bottles before release. Ageing capacity: Unlimited. This wine aquires extra complexity with age. Sensory characteristics: Very pronounced amber colour. Intense, fine and pleasant on the nose with notes of raisins and candid fruit followed by honey, vanilla and dry figs with hints of walnut and coffee. At the palate it reveals a full and intense body, with a very good balance between the softness and heat of its alcohol and its freshness. The finish is long and extremely pleasant. Serving suggestion: Matured cheese, dried patisserie and dark chocolate.

Extra Virgin Olive Oil | Organic

Extra Vergine di Oliva The Extra Virgin Oil is a fresh olive juice that has several virtues. As a precious elixir, it is preserved with extreme consideration and a particular care is given in each phase of production
  • Olive Varieties: Frantoio 60%, Moraiolo 30%, Leccino 5% e Pendolino 5%.
  • Area of production: The olive groves are situated at 400 mt. above sea level on a mixed soil that extends for 44 hectars and holds 8,000 plants.
  • Age of olive trees: Recent trees were planted in the 1980s while the older trees were planted in the 1950s.
  • Plantation density: Around 300 plants per hectar.
  • Training system: polyconic vase.
  • Time of harvest: From late October to late November.
  • Method of harvest: Olives are harvested by hand to ensure that only perfectly healthy olives, of optimal ripeness are selected.
  • Processing: The olives are first washed in order to remove leaves and impurities, then they are cold-pressed at a controlled temperature of 22 ° for approx 30 minutes. The separation of the oil and the vegetation water is realized through centrifugal.
  • Percentage of oil produced from the olives: It varies widely every year, but usually under 15%.
  • Sensory Characteristics: It is a brilliant green color with golden undertones. Its perfume is an intense and persistent wet grass with hints of artichoke and eggplant. It is full bodied with slight tastes of fruit, spice and herbs.
  • Serving suggestions: The ideal use of this particular oil is with authentic cold dishes of raw vegetables soups, salads and dips. However, it is also perfect in cooked sauces and roasts.

The company covers more than 110 hectares of which 44 hectares are cultivated with olive groves. It is fertilized exclusively with organic products or legume green manure, taking full account of nature.The limited production of biological cultures also ensures a better quality, year after year. The olive harvest, like the one of the grapes, is traditionally done by hand for an exclusive selection of raw materials. The extra virgin olive oil derives exclusively from organic olives of the farm, which are still "hand-picked" and then cold-pressed in their own mill.

The Poggio Rubino estate is located in the area above the hills of Montalcino at an altitude of 470m above sea level, about three kilometres from the town centre and here produces its rare wines. The estate extends over 15ha and the vineyards cover a surface area of 7ha, entirely cultivated with select Sangiovese while the remaining 0.3ha will be planted in Spring 2010.  On average, the vines are ten years old with the exception of the most recent ones planted in 2006 at San Prospero.  The vineyards are positioned in different areas within the territory of Montalcino.  Each individual location and the characteristics of its terrain allow for the attainment of wines with evident personalities accentuating the uniqueness of each individual vineyard.

The most suitable care in cultivation is carried out strictly by hand including the careful selection of canes during pruning and at the moment of the shoot selection along with the thinning of the clusters when the veraison starts.  This enables each single vine to maintain a vegetative balance and an excellent distribution of production, thus ensuring the complete maturation of the bunch. The goal is to produce from 1 to 1.5kg per plant in order to force each individual vine into channelling all its energy into those few clusters and, likewise, imparting to each of them the highest possible sugar and polyphenol concentration.  In turn, this permits the grapes to reach their full potential from an oenological point of view (polyphenols, tannins and anthocyans) even in most difficult growing years.  This type of management allows for both a great limitation in the use and the type of pesticides (in fact, only copper and sulphur are used) and a refusal to use chemical weed control in favour of working the land.  The maximum yield per hectare is 50 to 60 quintals.
